Easy Vegetable Strudel

I came across this recipe the other day while pinning (surprise, surprise) and was taken aback by how simple and delicious it was so I thought I would share –

You will need:

Roughly 6 sheets of phylo dough

Shredded Mozzarella

Olive Oil

Misc. Veggies ( I used red onion, eggplant, green pepper and zuchinni)

Salt/Pepper

First, preheat your oven to 425 degrees farenheit

Next dice all of your vegetables and spread them out on a baking pan

Drizzle the vegetables with olive oil and add salt/pepper – roast for about 10 minutes

While your vegetables are roasting, spray another baking pan with olive oil.

Then, layer about six pieces of phylo dough on top of one another, sprinkling each layer with mozzarella and spraying with olive oil

After the veggies are roasted, spread the vegetables and a little more mozzarella on top of your 6th sheet of phylo dough leaving about 1 1/2 inches around the edges

Fold all of the edges over

Picking up one of the longer sides, roll the phylo dough (carefully!) into a log

Spray your log with olive oil and add a dash of salt and pepper.

Bake for 20 (ish) minutes or until golden brown

Once you take your strudel out of the oven, allow it to cool for a few minutes before you devour its gooey cheesy goodness!
